Vegetarian Udon Noodles (Lo Mein)


Vegetarian Udon Noodles (Lo Mein)
  • 1 packet of Udon noodles - cook as per packet instructions 
  • 1 Table spoon Olive oil 
  • 2 Cloves Garlic - Minced
  • 1 Onion - Sliced 
  • 2 cups Broccoli - Florets 
  • 1 Yellow (can replace with green or red) capsicum - Sliced
  • 1 Carrot - Sliced
  • 2 Tablespoon Balion Coco Amino Ginger
  • 1 Teaspoon Sesame Oil. 

Prepare the vegetables by slicing and chopping as needed. Pour the olive oil into a large skillet over medium-high. Add the garlic and onion to the pan and saute for about two minutes.

Then add the Carrots broccoli, & bell pepper and saute for another 4 minutes. Meanwhile, in a small mixing bowl, whisk together Balion Coco Amino Ginger & sesame oil.

Add the cooked udon noodles to the pan. Stir-fry for about 2-3 minutes till noodles are mixed with vegetables. 

Pour the sauce in the pan and stir to mix. Serve warm.
